Lighting the fire: The mesquite wood is lit (lit) in the oven and left until it turns into embers.

Marinating the meat: Season the lamb with Mandi spices, salt and olive oil and leave it aside for an hour.

Soaking the rice: Soak the “Amber” (Basmati) rice in water for 30 minutes.

Cooking the lamb: Place the lamb on a metal tray and place it in the oven with the embers or charcoal.

Cooking rice: Add rice to the oven with water and cover.

Simmer: Leave the lamb and rice on low heat for an hour and a half or until the lamb and rice are cooked.

Removing the food from the oven: Remove the lamb and rice from the oven and serve with yogurt or hummus salad.
