How to make Mansaf

Mansaf: A Journey Through Time and Flavors


History of Mansaf:

Mansaf is believed to have originated in the Levant and Jordan, from where it spread to the rest of the Arabian Peninsula. Some accounts suggest that its history dates back to the Umayyad era, while others believe that it originated during the Ottoman Empire.


Mansaf ingredients:

the components:

  • For boiling:
  • 1 kg of chopped lamb or chicken
  • bay leaf
  • cinnamon
  • garlic
  • onion
  • cardamom
  • water
  • For milk:
  • 2 cups of milk
  • 1 cup yogurt
  • 1 tablespoon cornstarch
  • 1 egg white
  • 1 cup of yogurt
  • For rice:
  • 2 cups basmati rice
  • 1 teaspoon turmeric
  • salt
  • water
  • 2 cups chicken broth
  • To apply:
  • Bread Sharak
  • parsley
  • almonds

Preparation method:

1. Boil the meat:

  • In a saucepan over medium heat, place the meat, then add the bay leaves, cinnamon, garlic, onion and cardamom.
  • Cover the mixture with water and leave it on the fire for about an hour until the meat is cooked. When it boils, remove the scum from the surface.

2. Preparing the yogurt:

  • In an electric blender, put the milk, yogurt, cornstarch, egg whites and yogurt.
  • Mix until combined.

3. Cooking rice:

  • In a saucepan over medium heat, heat the oil then add the rice, turmeric and salt.
  • Cover the mixture with chicken stock. When it boils, reduce the heat and cover.
  • Boil the rice for 20 minutes until cooked.

4. Cooking meat with milk:

  • In a saucepan over medium heat, place three-quarters of the yogurt mixture and the meat pieces.
  • Leave the mixture on the heat for 45 minutes until the meat is cooked.

5. Submission:

  • Place the shrak bread in a serving dish and drizzle a little of the yogurt mixture over it.
  • Add the rice and cooked meat.
  • Garnish with parsley and almonds.
  • Serve the mansaf with the remaining yogurt.

Mansaf is served on various occasions, such as weddings, religious and social events. It is also served as a main dish in many restaurants.
